Carrot Cake

This is my late grandmother O'Brien's traditional Italian Christmas Eve main entree. I am carrying on the tradition of making this unique dish. Very basic ingredients: Pastene Tomatoes, Olive Oil, Fresh Basil, Salt and Pepper and a bit of Garlic Salt to taste.

Napolean



This is 3 layers of puff pastry that is filled with a diplomat cream (pastry cream and whipped cream)with added gelatin for stability. It is usually topped with Fondant and then decorated with chocolate. I used powered sugar on top and then the ends have toasted slices of almonds.

Gateau St. Honor



This is a beautiful dessert that my classmates made, I had to post it! The bottom layer is a puff dough circle and then bound with patachoux. The patachoux was used as the second layer and for the cream puffs that is filled with pastry cream. The center is filled with pastry cream and then topped off with whipped cream and caramel to bind and decorate!

Apple Gallette




This Gallette is made with a tart shell dough (Pate Brisee) and is filled with a traditional apple pie filling with the addition of raisins!

Dessert Taco



This fluffy, pancake like consistency taco shell is filled with a mango cream as well as fresh mangos. It was lightly dusted with powdered sugar and then branded for appearance. The taco sits on top of a mango flavored creme anglais sauce and fresh mango confetti for garnish.

Playing with plating desserts at school



This is like a scone cut in half and filled with a mocha flavored cream and surrounded by a chocolate sauce and candied macadamia nuts.

Whiskey Pecan Tart



Tasty tart shell (pate brisee)containing a pecan whisky caramel filling with chocolate chunks. Accented with a nice decorative white and milk chocolate drizzled topping.

Berry Strata



This is a creamy bread pudding with assorted berries and ricotta cheese. Thanks Giada!

This French Classical Dessert is filled with a Frangipan (Almond Paste)and surrounded by ooh so flaky Puff Dough! TASTY!!

Fruit Tart



This beautiful fruit tart has a wonderfully buttery shell which is lined with chocolate. The filling is a homemade vanilla flavored pastry cream topped with Kiwi, Raspberry's, Blackberries and strawberries with a nice apricot glaze for a glossy finish.

Award Winning Apple Pie



Here is the famous Apple Pie my Mom has been making for years. Although her crust comes out much neater and uniform, I am still learning and I will get there. This pie won first place at a company Halloween Pie Contest by a panel of judges.
